The greener leaves of the endive, the outer ones, are more bitter than the whitish or yellowish ones inside, which develop in the dark when tied when they are in the ground. It is what is known as bleaching. For an optimal development, the endive needs warm temperatures pulling cold, in fact, it is a winter vegetable. It is sown between spring and summer and it is collected between the months of December and March. The heat accentuates its bitterness.
